With the right approach and some delicious, budget-friendly recipes in your arsenal, you can enjoy hearty and satisfying meals without breaking the bank. In this article, we'll share a fantastic recipe for a Fast One-Pot Stew that's not only easy to prepare but also easy on your wallet. This meal is perfect for busy weeknights when you need to feed your family quickly and affordably.
Note from Micah: This recipe was handed down to me through my family. When I was younger, my dad competed in a Hush Puppy Olympics (yes, that is a thing!). On the nights that my dad and his competition partner would practice their recipe, this would be the dinner. I remember the combination of smells - yummy stew with a side of fresh hush puppies. While I have modified this recipe slightly over time, it still is foundational the same yummy soup I remember from my childhood. I hope you enjoy it!
Fast One-Pot Stew Recipe
Ingredients:
2 lbs. stew meat or cubed round steak
1 can of new potatoes, cubed
1 small can of stewed tomatoes
1 can of Rotel tomatoes with chilies
1 can of green beans
1 can of kernel corn
1 large can of tomato juice
2 tbsp. Greek seasoning
Salt and pepper to taste
Instructions:
Begin by gathering all your ingredients. This recipe relies on canned goods, which are often budget-friendly and have a long shelf life.
In a large stockpot, place the stew meat or cubed round steak. Season with Greek seasoning, salt, and pepper. Cook meat through until brown. Greek seasoning adds a flavorful and aromatic touch to the stew, making it a fast family favorite.
Next, add the cubed new potatoes, stewed tomatoes, Rotel tomatoes with chilies, green beans, and kernel corn to the pot. Make sure to NOT drain the cans of vegetables before adding them to the pot (liquid contributes to stew).
Pour the large can of tomato juice over the ingredients. This will serve as the base for your stew, providing a rich and tangy flavor.
Stir the ingredients together, ensuring that the vegetables and meat are evenly distributed throughout the pot.
Place the pot on the stove over low heat and allow the stew to simmer. Simmering will help the meat cook properly and infuse all the flavors together. This should take about 30-45 minutes. Stir occasionally to prevent sticking and to ensure even cooking.
Taste the stew and adjust the seasonings to your family's liking. You can add more salt, pepper, or Greek seasoning as needed.
Once the meat is fully cooked, and all the ingredients are heated through, your Fast One-Pot Stew is ready to serve.
